Un avance rápido hasta hace unos meses. Estaba trabajando en una receta de gambas al ajillo y, para acelerar, pasé un poco de mi ajo por un microplano. Cuando lo dejé caer en la sartén con aceite caliente, sentí una sensación punzante en la nariz, como un golpe fuerte de wasabi, y mis ojos comenzaron a lagrimear. Sabía aún peor, con un sabor amargo que arruinó los camarones.

El hecho de que el ajo microplaneado sea más picante que el picado, no es sorprendente en sí mismo. Desde entonces, he tenido curiosidad acerca de este efecto, así que decidí profundizar un poco más con algunas pruebas más focalizadas. Los resultados son útiles, porque arrojan luz sobre cuán importante puede ser el método de picado. Decidir si picar finamente, triturar en un mortero, pasar por una prensa de ajo o alcanzar ese microplano no es solo una cuestión de cuál te resulta más conveniente: puedes tener un efecto importante en el sabor de tu comida.
La mejor defensa es un buen ataque
Si te preguntas por qué el ajo huele así, la respuesta es una guerra biológica. Cuando sus células son dañadas, por ejemplo, por una plaga, dos moléculas, una llamada aliina y una enzima llamada aliinasa, entran en contacto entre sí y juntas producen un nuevo compuesto llamado alicina, que es responsable del olor acre que repele a los vampiros que asociamos con el ajo. Cuanto más daño celular se produce, más alicina se produce y más apestoso se vuelve el ajo, razón por la cual un solo diente puede tener un impacto tan variable en un plato, dependiendo de su forma.

Esta es la técnica que utilizo más a menudo en mi propia cocina, pasando el cuchillo repetidamente sobre el ajo hasta que se reduce a un montón de trocitos finos. Si bien es pequeño, el ajo picado con cuchillo tiene las piezas más grandes y discretas que cualquiera de los otros métodos que probé. También es el más seco: el picado manual no se abre ni libera los fluidos de tantas células como los otros métodos.

En cuanto al sabor, el ajo picado a mano era relativamente suave. Tenía un agradable sabor a ajo que, incluso después de masticar, permaneció suave.
